Vegan Pulled "Pork" with Sweet Potato Fries

So after going to the Chicago Diner, I was inspired to try and make the same type of stuff at home. I decided I wanted to make a BBQ and sweet potato fries. It came out great was was super easy and very cheap!! This whole meal for 2 under $20.




SWEET POTATO FRIES


1-2 large sweet potatoes


Salt, pepper, olive oil and seasonings.






Pre heat the oven to 500


Wash and peel if you do not want the skin on. ( I do so I left them on)


Cut the potato into strips. ( this was a bit harder than I expected so be careful) Don't make them too thick or they won't cook though.


Next toss them into a big bowl.


Next pour the olive oil over the fries, ( don't soak them, just lightly coat them) add your seasonings. I did salt pepper, garlic salt and Rosemary. You can use what ever you like though. 


Put the lid on or use your hands to toss them around and get everything covered.


Next get a cookie sheet and some tin foil. Cover the sheet and coat the tin foil with a little oil and spread the fries out. 




Now bake for 30 mins, turning them once or twice to make sure all sides get cooked even.






VEGAN BBQ PULLED "PORK"    I started to make this 10 mins after the I put the fries in the oven.


1 1/2 lbs of Seitan


1 cup of Franks Hot Sauce or your favorite BBQ sauce


2 Limes


3 tsp. Agave Nectar or Maple Syrup


2 tsp. Salt




Either chop or tear the Seitan into pieces. Lightly coat a frying pan with olive oil and brown the Seitan on both sides.







 Next take the sauce ingredients and mix them in a bowl. After the Seitan is cooked add it to the bowl with the sauce.




Make sure you mix the stuff together. Now here is where you can do a few different things.


The fries should be done by now.








You can either make your pulled "pork" into a sandwich. I added some ranch and cheese. ( Both vegan)




or




Add some green beans.
